GENUINELY SOUTHERN FORESTS GRILLED CAPSICUM STUFFED WITH GOAT CHEESE

Grilled Avocado Salad with Dukkah and Quick Onion Pickle

Sweet, smoky, and full of flavour, this Grilled Capsicum Stuffed with Goat Cheese recipe is a celebration of simple ingredients done well. The natural sweetness of roasted capsicum pairs beautifully with creamy goat cheese, creating a dish that’s as vibrant as it is delicious. Perfect as a light starter, a side for barbecues, or a colourful addition to a shared table.


Serves 4


INGREDIENTS

  • 4 red or orange capsicums, halved and seeds removed

  • 200 g goat cheese

  • 200 g creme fraiche

  • 1 clove garlic, finely

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • salt and black pepper, to taste

  • 1 - 2 tbsp olive oil

  • Optional: drizzle of balsamic glaze or chopped fresh parsley for garnish


METHOD

  1. Preheat a grill or BBQ to medium-high heat. Brush the cut side of the capsicum halves lightly with olive oil and season with salt and pepper.

  2. Place capsicums cut-side down on the grill. Cook for 8–10 minutes until they have nice char marks and start to soften.

  3. While the capsicums are grilling, mix goat cheese, cream, garlic, thyme, salt, and pepper in a bowl until smooth.

  4. Flip capsicums over and spoon the goat cheese mixture evenly into each half. Close the grill lid and cook for another 5–7 minutes until cheese is warm and slightly golden.

  5. Remove from grill and serve warm, garnished with balsamic glaze or fresh parsley.
