Fresh black truffles are one of the Southern Forests' most prized winter delicacies, celebrated for their rich aroma and distinctive earthy flavour. Carefully unearthed during the cooler months, these culinary treasures bring a touch of indulgence to even the simplest dishes. Paired with crisp sourdough and melted cheese, fresh truffle transforms an everyday toastie into a comforting seasonal treat that lets the region's produce shine.

Serves 2

INGREDIENTS

  • 4 slices sourdough bread

  • ¾ cup grated cheddar or Swiss-style cheese

  • 5–10g fresh Southern Forests black truffle, thinly shaved

  • Butter or olive oil

METHOD

  1. Lightly butter the outside of each slice of sourdough.

  2. Place the cheese and most of the shaved truffle between the bread slices.

  3. Cook in a frying pan over medium-low heat until golden and crisp on both sides and the cheese has melted.

  4. Remove from the heat and finish with the remaining fresh truffle shavings.

  5. Serve immediately while hot.
