Simple, indulgent and made for sharing, this baked brie celebrates the flavours of Western Australia’s South West with a recipe that changes beautifully with the seasons.
Creamy melted cheese paired with golden local honey creates the perfect base for showcasing fresh, seasonal ingredients. Add the earthy richness of Southern Forests black truffle and chestnuts in winter, crunchy nuts and herbs in spring, or fresh summer fruit when the warmer months arrive.

Serves 4-6
INGREDIENTS
1 wheel of brie or camembert (200–250g)
2 tablespoons local honey
1 tablespoon olive oil
Fresh thyme or rosemary
Cracked black pepper
Crusty sourdough bread, crackers or fresh produce to serve
METHOD
Preheat oven to 180°C.
Place the brie in a small ovenproof dish or on a lined baking tray.
Lightly score the top of the cheese.
Drizzle with olive oil and honey, then sprinkle with fresh herbs and cracked pepper.
Bake for 12–15 minutes, or until the cheese is warm, soft and ready for dipping.
Serve immediately with your favourite seasonal additions.
